Nonaka Bakery, which softly opened in December 2025, will celebrate its official grand opening on May 16, 2026 at 8:00 a.m. with a small community gathering and a blessing from a local Hawaiian church. The event marks a formal beginning for a bakery that has spent its first several months quietly refining its recipes, flavors, staffing, and daily systems while building a loyal following in the heart of Waimea Town.

The bakery is led by head baker and co-owner Nicol Nonaka, whose family has farmed in Hanapēpē Valley since 1927. That history gives the business a sense of place before the first pastry ever comes out of the oven. Nonaka comes from a family with deep roots in one of Kauaʻi’s oldest agricultural communities, and her professional background includes time as a pastry chef at the Kauaʻi Marriott Resort. At Nonaka Bakery, those two worlds meet: the precision of resort pastry work and the grounded, family-centered traditions of West Kauaʻi.
She is joined by co-owner Brendon Philipps, a Waimea resident and descendant of the Kamishita and Masuda families. His own family history includes generations of local business ownership and community involvement on the West Side, adding another layer of connection to the bakery’s story.
Together, they have created a place where Japanese and Hawaiʻi-inspired flavors come together in an inviting, friendly setting shaped by family history and deep connections to West Kauaʻi.
The menu reflects that balance. Nonaka Bakery’s daily pastry case brings together Japanese and Hawaiʻi flavors with classic baking techniques. Among the early favorites are the bakery’s specialty turnovers, already becoming locally known, along with laminated croissants made with French-imported butter. The Japanese Arabiki sausage pie, wrapped in a buttery latticed crust, offers a savory counterpoint to the sweeter offerings, while three varieties of freshly made mochi bring a familiar island favorite into the daily rotation.
The charming bakery also introduces seasonal pastries and limited-time specialties throughout the year, giving regular customers a reason to keep checking back. It is the kind of place where the staples matter, but so does the possibility of finding something new.
Coffee and drinks are a major part of the experience as well. Nonaka Bakery serves premium coffee from Illycaffè, the family-owned Italian roaster founded in Trieste in 1933, with a beverage menu that includes Italian espresso drinks, brewed coffee, and a nitrogen-infused cold brew that has quickly become a customer favorite. The handcrafted refreshers lean more local, with lilikoi ginger, guava lime, and strawberry lemonade made with ingredients sourced from the family farm. Premium matcha imported from Japan rounds out the menu with a selection of matcha drinks that fit naturally beside the bakery’s Japanese-inspired pastries.
Nonaka Bakery is also rolling out a more robust online ordering and pickup system. The system includes an online order pickup kiosk designed for faster service, an especially useful addition for a bakery located directly along the highway. For residents, commuters, and visitors heading toward Waimea Canyon, Kōkeʻe, or the far reaches of the West Side, the new system is meant to make it easier to pick up pastries, coffee, and drinks without slowing down the day.
